Spinach, Apple, and Ginger Green Smoothie

This is my go-to smoothie! The ingredients are available most of the year so they’re easy to get and it doesn’t require a lot of prep. If you want to learn more about my experience with green smoothies and why they’re so awesome, check out my Why Green Smoothies? page.

The point of green smoothies is to get more green leaves into your diet without adding a lot of extra sugar or calories, but still making it taste good so you’ll want to drink it. This isn’t a meal replacement or protein smoothie. The amount of fruit you use may vary depending on the season and what the fruit tastes like. I may only need one apple for my smoothie, but your apples may not be as sweet or flavorful as mine, and you may need to add more.

Notes About Ingredients

Spinach – Spinach is one of those powerhouse veggies. It’s high in calcium, iron, vitamin A, C, K, and folic acid. I use regular spinach as opposed to baby spinach. I find regular spinach have more flavor and cheaper but you can use whichever you prefer.

Apples – I buy organic and I keep the skins on when blending. If you can’t get organic, then I would peel the skins off. I usually use Fuji or Honeycrisp apples because I find those to be the sweetest.

Celery – No need to take the leaves off the celery when using. You can throw those into the blender too!

Lemon – I buy organic and include the peel in the smoothie. You only need a small piece and it adds a lot of lemon flavor!

Ginger – You only need a small amount of fresh ginger root! I start with a 1/4″ piece and add more if needed. A trick to peeling ginger root is to use a spoon to peel the skin off.

Chia Seeds – Chia seeds have a lot of great health benefits. I add them to this recipe because they actually help keep the juice and fiber from separating after you’re done blending! It’s a lot easier to drink this way!

Spinach, Apple, and Ginger Green Smoothie

Ingredients

  • Spinach - 1-1.5 handfuls
  • Celery - 1 stalk
  • Apples - 1-2 small to medium sized apples (I like Fuji or Honeycrisp)
  • Ginger - 1/4" piece
  • Lemon - Thin slice with peel
  • Chia Seeds - 1 tsp.
  • Water - 1-1.5 Cups
  • Ice Cubes - 4-5

Instructions

  1. Put all ingredients except the chia seeds into a blender and blend until completely smooth.  
  2. While the blender is running on low, pour in the chia seeds.  Turn the blender up higher for about 20-30 seconds to break up the chia seeds.  Enjoy!
