I don’t know how this happened but it’s gone from watermelon season to pumpkin season real fast! This year is flying by! That said, it’s psl (pumpkin spice latte) time. I’m not going to lie, I’m always excited for this time of year!
These are so easy to make! They’re vegan, reduced calorie, delicious and give you a boost of fiber!!! I don’t have an espresso machine so I brew some strong coffee to use instead. I like to blend the pumpkin mixture in my Vitamix so it gets all foamy and drinks like a real latte!
My psl game was elevated a few years ago when I visited a coffee shop in Paso Robles California called Spearhead Coffee. I ordered a psl and it was made with their fresh pureed cooked pumpkin. It was delicious and if you’re in the area I urge you to stop in! To save time I use canned pumpkin. One day I will make my own pumpkin puree but right now it feels like there is no time for that!
Notes About Ingredients
Pumpkin – I started this recipe out using Trader Joe’s canned pumpkin. Unfortunately every can of pumpkin had a different consistency. Some were thick and some were thin. Every time I made the latte it came out differently. I switched to Libby’s pumpkin puree and every can has been the same. Pumpkin is a good source of fiber and vitamin A!
